Food Safety Training and Resources

ACT Health offers access to food safety training and resources.

DoFoodSafely and I’M ALERT are free online food safety training programs. Both programs provide a basic understanding of safe food handling. DoFoodSafely is available in English, Arabic, Korean, Hindi, Nepali, Punjabi, Simplified Chinese, and Vietnamese. If you complete one of these the programs, you will get a certificate.

Businesses must ensure all food handlers have the food safety skills and knowledge needed to do their job. At a minimum, it is strongly recommended that food businesses take advantage of these free online training programs. Professional training may be needed for more complex food handling activities such as sous vide and smoking meats.

All Food Safety Supervisors for food businesses operating at a declared event must complete all modules of the DoFoodSafely or I’M ALERT food safety training. This includes not-for-profit community organisations.

Resources

We have developed various resources to help you comply with ACT Food Safety Laws and standards. These resources can help you make sure the food you sell is safe for the public to eat.

These resources don’t cover all requirements set out in the local and national food laws and should not be considered legal advice.

Food Safety Records – Example Templates

The Food Safety Records – Example Templates can be adapted or combined to suit your business needs. Businesses may use these to meet the recordkeeping requirements of Standard 3.2.2A of the Food Standards Code.  Detailed information about the Standard is on the Food Standards Australia New Zealand Standard 3.2.2A info page.

Food Safety Guide

The Food Safety is Your Business guide helps food business managers and staff better understand food safety practices. The guide discusses basic hygiene and food safety principles, including hand washing, storing and receiving food, temperature control and sanitation.

Food Business Egg Guide

The Food Business Egg Guide provides advice for food businesses about how to handle eggs safely. The guide outlines minimum requirements and best practice recommendations to assist food businesses to sell safe food.

The guide also highlights the risks associated with foods that contain raw eggs and strongly recommends that businesses do not sell food that contains raw egg. Food that contains raw egg has been implicated in a number of food poisoning outbreaks in the ACT and elsewhere. Businesses have been prosecuted for selling unsafe raw egg products.

 

Information for Temporary and Market Food Stalls

The Food Stall Guidelines help food businesses and individuals who operate temporary food stalls at markets, fetes and festivals.

We also recommend not-for-profit organisations follow the requirements set out in this guide.
